The Bean and Sundried Tomato Burgers are a tasty and flavorful vegetarian main course, perfect to pair with a mixed salad, cooked or grilled vegetables. They are ideal for those who love legumes or, like me, eat few and don’t have many ideas on how to serve them, especially to young children. Maybe for the little ones, it’s better to use peeled beans. The process is really simple, just blend all the ingredients together in a food processor, and you’re done! I cooked the burgers in a fan oven, but you can easily cook them in a skillet with a drizzle of extra virgin olive oil or in an air fryer. If you like burgers, you can also try:

- 1 1/4 cups large white beans
- 3 sundried tomatoes in oil
- 1.5 oz red onion
- to taste herbs (Thyme, sage, rosemary)

- 3 tbsps breadcrumbs
- 2 tbsps extra virgin olive oil

Steps to make Bean and Sundried Tomato Burgers
To prepare the Bean and Sundried Tomato Burgers, first drain the large white beans well, and place them in a food processor. Slightly drain three sundried tomatoes and add them to the processor, then add a pinch of salt, a grind of black pepper, 20 g of chopped red onion, three tablespoons of breadcrumbs, and two tablespoons of extra virgin olive oil. Blend everything well in the processor. Now take a baking tray and line it with parchment paper.
Prepare the burgers, using a pastry ring. Drizzle a little extra virgin olive oil over the burgers. Preheat the fan oven to 356°F, and when it is hot, bake the burgers and cook them for about 20 minutes. Remove from the oven, let them cool slightly, and then serve them with a mixed salad or great with cooked or grilled vegetables.
