- 1 roll puff pastry (rectangular)
- 4 strawberries
- 18 blueberries
- 2 tbsp powdered sugar
- 7 oz ricotta
Steps to prepare the puff pastries with ricotta, strawberries, and blueberries
To prepare the puff pastries with ricotta, strawberries, and blueberries, first unroll a rectangle of puff pastry on a work surface and cut it into 6 squares with a knife. Then use the knife to create a sort of inner square, but without removing it. The edges of the square are not completely cut; the cuts with the knife are very close together.
Now prepare the cream with ricotta and 2 tablespoons of powdered sugar. Place a good amount of ricotta in the center of each square. Wash the strawberries, remove the stalks, and slice them lengthwise. Now place the strawberries on top of the ricotta cream. Wash the blueberries. I put 3 slices of strawberries and 3 blueberries on top.
Then create small borders with the puff pastry by folding it inward. Seal the edges well with the tines of a fork so that they don’t open during baking. Meanwhile, preheat the static oven to 356 degrees Fahrenheit. Bake them for about 20 minutes, but keep an eye on them as baking time depends on the oven. They should be golden.
Take them out of the oven and let them cool. Serve the puff pastries with ricotta, strawberries, and blueberries with a dusting of powdered sugar. Delicious and super quick!

You can store the puff pastries in the refrigerator for 1 day in an airtight container.
To sweeten the ricotta cream, you can use granulated sugar instead of powdered sugar.
If you want, you can use mascarpone instead of ricotta.
