To prepare the baked chicken breast with potatoes and onions, first peel the potatoes, wash them well under running water, cut them into pieces, and cook them for about 10 minutes in a pot with water. Once they are blanched, drain them, let them cool, and put them in a large bowl. While the potatoes are cooking, prepare the red onion. Slice it and add it to the same bowl. Then season everything with 2 tablespoons of breadcrumbs, extra virgin olive oil, salt, and pepper, and I added a specific seasoning with a mix of aromatic herbs, perfect for vegetables.
Now prepare the chicken slices. First, pass them in flour, then in eggs beaten with a fork, and in breadcrumbs. This is the procedure for each slice. Place the breaded slices on a baking tray lined with parchment paper, drizzle some extra virgin olive oil on top, and pour the previously prepared potatoes and onions on top.
Meanwhile, preheat the static oven to 392 degrees Fahrenheit and as soon as it is hot, cook the chicken breast with potatoes and onions for about 20 minutes.
