Ingredients to prepare the salmon and radicchio puff pastry star

  • 3.5 oz smoked salmon
  • 2.2 oz spreadable cheese (Philadelphia)
  • 2.8 oz variegated radicchio of Castelfranco IGP
  • 1 sheet puff pastry (round)

Tools

  • Pan
  • Chopping board
  • Knife
  • Parchment paper
  • Baking tray

Steps to make the salmon and radicchio puff pastry star

  • To prepare the salmon and radicchio puff pastry star, first unroll a sheet of round puff pastry. Spread some spreadable cheese on top; I used Philadelphia in this case. Then make 4 cuts with a knife. Now make another 4 cuts and cut the already cut corners in half. Meanwhile, wash and cut the radicchio into strips; I chose variegated, but you can use whichever you prefer. Then cook it in a pan for just a couple of minutes, seasoning with salt.

  • Now take the smoked salmon and add it to the base of the pastry, then fold the pastry pieces over the salmon to enclose it. Do the same on the other side and create all the star points.

  • Now, starting from the center of the star, make small cuts towards the points of the stars. Now add the previously cooked radicchio and close the edges of the puff pastry from the center outwards. Remember to close the edges well, or they will open during cooking.

  • To finish, brush the entire star with milk. Preheat the static oven to 356 degrees Fahrenheit, and when it’s hot, bake the puff pastry star for 25 minutes; it should be golden. Let it cool slightly and then serve! Happy Holidays!

Storage and Tips

You can store it in the refrigerator in an airtight container for up to one day.

If you prefer, instead of Philadelphia, you can choose another spreadable cheese or ricotta.
