Ingredients for Confit Cherry Tomatoes
- 18 oz cherry tomatoes (piccadilly)
- to taste sugar

- Half tbsp dried oregano
- 1 sprig thyme

Steps to Make Confit Cherry Tomatoes
To prepare confit cherry tomatoes, first wash the cherry tomatoes well and cut them in half lengthwise. Place them on a baking tray lined with parchment paper, facing up, close but not overlapping. Now, season the tomatoes with a sprinkle of sugar, salt, and black pepper, and a drizzle of extra virgin olive oil. Add the aromatic herbs to taste; I used dried oregano, thyme, marjoram, and rosemary.
Now bake in a preheated ventilated oven at 300°F (150°C) for 1 hour and 15 minutes. Keep an eye on the tomatoes as cooking times may vary from oven to oven. The tomatoes should be well caramelized. Let them cool slightly and then serve! Delicious in all seasons!
Storage and Tips
We can store the tomatoes in an airtight container in the refrigerator for 2 days.
If possible, use tomatoes of the same size so that the cooking is uniform.
You can use the aromatic herbs you prefer.
If you like, you can use brown sugar instead of white sugar.
