Ingredients for making cold black rice with zucchini and speck
- 3/4 cup black Venere rice
- 1 zucchini (large)
- 1.75 oz speck
- to taste extra virgin olive oil
- 1 pinch black pepper
- Half red Tropea onion
Steps to make cold black rice with zucchini and speck
To prepare black rice with zucchini and speck, first put a pot of salted water on the stove to boil. Weigh the rice and cook it for about 40 minutes, stirring occasionally. Meanwhile, prepare the side dish. Peel and wash a large zucchini well and cut it into cubes. Also chop half a red Tropea onion. Sauté it in a pan with some extra virgin olive oil for a couple of minutes, then add the zucchini and a splash of water to soften it. Adjust with salt and pepper and let it cook for about 10 minutes. Finally, cut the speck into pieces, if you use sliced speck, but if you prefer, you can use it already diced or in sticks. Add it to the zucchini toward the end of cooking and leave it in the pan for a couple of minutes, just to brown it and make it crispy. Turn off the heat.
At this point, drain the rice. Rinse it under cold water to stop the cooking, now drain it well so that it is not too waterlogged. Put it in a bowl and add the side dish with zucchini and speck, adjust with a splash of extra virgin olive oil. Serve it cold. Your cold black rice is ready to be enjoyed!
