The baked parmesan potatoes are a very tasty and flavorful side dish, an excellent alternative to traditional baked potatoes. You only need a few ingredients to prepare these potatoes. You will need potatoes; in this case, to make it even quicker, I opted for pre-cooked potatoes that I found in the refrigerator section of the supermarket, extra virgin olive oil, a good sprinkle of grated parmesan, salt and pepper to enhance the flavor, and aromatic herbs such as sage, rosemary, and oregano leaves. They will become very tasty and especially crispy, with a nice crust, perfect to accompany meat or fish. If you choose to use classic potatoes that are not too large, clean them well, blanch them in salted boiling water for at least 10 minutes. Then proceed with the procedure below. - 1.1 lbs potatoes (small)

Steps to Make Baked Parmesan Potatoes
To prepare the baked parmesan potatoes, first wash the pre-cooked potatoes well under water if you use ready-made ones from the supermarket like I did. Otherwise, if you use classic potatoes, choose small new ones, wash them well under water to remove any soil residues, and boil them in salted boiling water for about 10/15 minutes, they should not be too soft. You can choose to make them with or without the skin; they will be delicious either way. Now cut them in half lengthwise.
Take a baking tray, round or rectangular, place a sheet of baking paper on it, pour some tablespoons of extra virgin olive oil over it, and a good sprinkle of grated parmesan. If you like, you can also add aromatic herbs of your choice; I also added oregano and sage. If you like, you can add some chili pepper and garlic. Now place the potatoes in the tray with the cut side down, sprinkle again with some parmesan, 1 pinch of salt, and black pepper, and you can add a drizzle of extra virgin olive oil again.
Preheat the static oven to 428°F and bake them for about 30 minutes. Take them out of the oven and serve hot. Perfect as a side dish or as a tasty appetizer.
Storage and Tips
You can store the parmesan potatoes in the refrigerator for 2 days in an airtight container.
If you want them even more flavorful, you can add aromatic herbs such as rosemary, sage, oregano.
You can also add chili pepper and garlic powder.
