Ingredients to Prepare the Savory Pie with Potatoes, Speck, and Mushrooms

  • 17.6 oz potatoes
  • 3.5 oz speck
  • 1 red onion
  • 6.3 oz champignon mushrooms (Canned)
  • 2 eggs
  • 3 tablespoons grated Parmesan cheese
  • to taste salt

  • to taste extra virgin olive oil
  • 1 roll puff pastry

Steps to Make the Savory Pie with Potatoes, Speck, and Mushrooms

  • To prepare the savory pie with potatoes and speck, first wash the potatoes, peel them, and cut them into not too large pieces. Take a pot and boil them in salted water for about 15 minutes from boiling, then drain. Meanwhile, finely chop a red onion and set aside. Do the same with the sliced speck, cutting it into strips. Now take a large non-stick pan, pour in some extra virgin olive oil, and sauté the chopped red onion, speck strips, and drained mushrooms. Sauté for a couple of minutes. Now add the potatoes, sauté everything for 5 minutes, and turn off the heat.

  • Meanwhile, unroll a roll of puff pastry and leave it at room temperature for a moment. Preheat the static oven to 392°F. In a large bowl, beat 2 eggs, add 3 tablespoons of grated Parmesan cheese, the previous mixture with potatoes, onion, speck, and mushrooms, and adjust the salt and pepper. Mix everything well and pour it over the bottom of the puff pastry. Close the edges well and bake at 392°F for about 30 minutes. It should be nicely golden.
