Pizza with Type 1 and Manitoba Flour in Stand Mixer

The pizza with type 1 and Manitoba flour in a stand mixer is the pizza that never misses on our table during the weekend! The inside of the pizza remains very soft but stays crispy on the outside. I use the Kitchenaid classic model, and I must say that I am really happy with it, it kneads wonderfully! I prepare the dough early in the morning for the evening but if you want you can prepare the dough the night before, it will be even lighter! I then bake the pizza in my G3 Ferrari pizza oven. But if you want, you can also bake it in a traditional oven!

Ingredients for preparing pizza with Type 1 and Manitoba flour in a stand mixer

  • 2 1/2 cups Type 1 flour
  • 1 1/2 cups Manitoba flour
  • 3/4 cup whole milk
  • 2/3 cup water
  • 1 tsp dry yeast
  • 1 1/2 tbsp extra virgin olive oil
  • 2 tsp salt
  • 1 pinch sugar
  • to taste tomato sauce
  • to taste mozzarella cheese for pizza

Steps for making pizza with Type 1 and Manitoba flour in a stand mixer

  • To prepare the pizza with Type 1 and Manitoba flour in a stand mixer, first heat the milk in the microwave until it becomes lukewarm and pour it into the bowl of the stand mixer with 1 teaspoon of dry yeast and a pinch of sugar. Start the stand mixer using the hook attachment at a low speed. Now add the sifted flours, 2/3 cup of water gradually, also add the extra virgin olive oil and when the dough is already well incorporated, add 2 teaspoons of salt. Let the dough work for 5 minutes. When the dough is ready, it will detach from the walls of the bowl. Now with lightly floured hands, work the dough slightly by hand on a work surface and give it the classic round shape.

  • Now place the dough inside a lightly floured bowl and score it with a knife. Make the classic folds in the dough, you can do 3 folds, one every 20/30 minutes. Cover with a lid or plastic wrap and let it rise until the evening.

  • With 500 grams of flour, I prepare about 4 pizzas that I will then bake inside the G3 Ferrari oven at 2 and a half for about 5 minutes. But if you wish, you can also bake it in a traditional oven. Bake it at 482°F in a static oven.

Storage and Tips

You can store leftover pizza in an airtight container until the next day, then reheat it in the oven for a few minutes.
