- 9 oz ricotta
- 2 rolls shortcrust pastry

- 2 tbsps grated Parmesan cheese

Steps to make the Halloween savory pie
To prepare the Halloween savory pie, first, make the filling. Start by cooking the spinach; in this case, I used frozen, but you can also use fresh spinach. In a non-stick pan, add some extra virgin olive oil and some golden onion, lightly sauté it, and then add the frozen spinach. Let them cook with a little water and cover for about 7 minutes. Cook the spinach on low heat and add water only if necessary; they should be soft. Now drain the spinach in a sieve to remove all the excess water. Otherwise, the filling will be too liquid. Now put the spinach in a large enough bowl, add the ricotta, 1 medium egg, 2 tablespoons of grated Parmesan cheese, and add salt and black pepper to taste.
Now take a round baking tray, place parchment paper on it with the first layer of shortcrust pastry. Pour the filling inside and try to level it well across the surface using a spatula or the back of a spoon.
Now take the second roll of shortcrust pastry, unroll it on a work surface, and with the help of a knife, carve out the eyes, nose, and mouth of our Halloween monster.
Now take the carved shortcrust pastry and gently place it over the filling so that it adheres well to the other. Try to create a border so that the filling does not spill out. Brush the pie with milk and preheat the static oven to 350°F and bake the pie for 40-45 minutes.
