Chicken Cutlets Stuffed with Speck and Cheese

The chicken cutlets stuffed with speck and cheese are a tasty second course, simple to prepare but above all delicious! They are perfect to prepare for both lunch and dinner as an alternative to the classic breaded chicken cutlet! I added slices of American cheese that my daughter loves because they are very creamy, but you can also choose Edam or Emmental cheese. Ingredients for Preparing Chicken Cutlets Stuffed with Speck and Cheese

  • 10.5 oz chicken breast (thinly sliced)
  • 3.5 oz speck slices
  • 4 slices of American cheese
  • 2 eggs
  • to taste all-purpose flour
  • to taste breadcrumbs
  • extra virgin olive oil
  • 1 pinch salt

Steps to Make Chicken Cutlets Stuffed with Speck and Cheese

  • To prepare the chicken cutlets stuffed with speck and cheese, first choose thin slices of chicken breast, or alternatively, you can pound them with a meat tenderizer. Take a slice of chicken breast and stuff it with 1 thinly sliced piece of speck and half a slice of American cheese.

  • Fold the slice well and seal the edges carefully so that the filling does not come out.

  • Prepare 1 plate and beat 2 eggs with salt. In another plate, combine flour and breadcrumbs. Now dip the chicken slices first in the egg and then in the breadcrumb mixture. Make sure the coating adheres well. If you want to do the complete process without mixing flour and breadcrumbs, first dip the meat in flour, then in the egg, and finally in the breadcrumbs. For convenience, and as taught by my mother, I mix flour and breadcrumbs together. If you like it crispy, do a double coating as I did. So, dip the slice of meat first in the egg and again in the flour and breadcrumb mixture.

  • Put some extra virgin olive oil in a large non-stick pan and brown the meat over medium heat first on one side and then on the other. Lower the heat and let the meat cook for about 10 minutes.

  • Now your stuffed chicken cutlets are ready to be served. You can pair them with a good side dish of potatoes and leeks or potatoes and peppers.
