Turmeric Buns for Hamburger

A few years ago, I happened to eat at a very famous vegan sandwich shop, called Flowerburger, and I immediately loved its original, colorful, and healthy buns!
I thought it would be a good idea to try to replicate some of their flavors at home, so I created these special turmeric hamburger buns.
Lots of color and flavor on the table, even at home.

Ingredients

Let’s prepare:

  • 3 1/4 cups All-purpose flour ((with W 260))
  • 3/4 cup Cereal flour ((Antiqua cereal))
  • 7 tbsp Water
  • 2/3 cup Milk
  • 2 tsp Sugar
  • 1 tsp Honey
  • 1 tbsp Fresh yeast
  • 1 1/4 tsp Salt
  • 4 tbsp Butter (or 3 1/2 tbsp of Olive Oil)
  • 2 tsps Turmeric powder
  • 1 Egg (whole)
  • 1 1/2 tbsp Poppy seeds (or sesame, or pumpkin seeds)

  • 1 Stand Mixer
  • 1 Baking Tray
  • 1 Parchment Paper
  • 1 Bowl

Preparation

Let’s prepare the dough for the turmeric buns

  • Put all the flour, with the turmeric, honey, and sugar in the stand mixer.

    In a separate pitcher, mix water and milk with the yeast and let it dissolve well.

    Start the stand mixer on low (you can use either the flat beater or the dough hook), and as it begins to mix, add the liquids.

  • When the dough is compact, after about 5/10 min, add the salt. Then, while the stand mixer is still running, add the butter in chunks (still cold from the fridge).

    Let the stand mixer work until the butter is absorbed.

    The turmeric bun dough should be glossy, compact, and smooth.

    At this point, it’s ready!

    Take it with your hands and place it on a slightly oiled table, forming a well-closed ball with your hands.

    When the bun dough is well shaped (see the video on youtube), let it rise in an oiled container for about 3/4 hours at room temperature.

    Rising times depend on the temperature of your environment.

    The dough should triple in size.

  • After about 4 hours, take our turmeric bun dough and place it on the table.

    Divide into portions of about 2 3/4 oz (for medium buns) or 3 7/8 oz (for large buns).

    Shape into balls with your hands and place the buns on a baking tray covered with parchment paper to rise again.

  • The buns should rise for about 30 minutes and be nice and puffy.

  • Now, beat 1 whole egg and brush the surface of the buns.

    You can sprinkle poppy seeds, sesame seeds, or pumpkin seeds on top.

    Bake immediately in a preheated oven at 338°F for about 18 minutes.

  • Here the turmeric buns are ready!

Storage

These turmeric hamburger buns can be perfectly frozen in appropriate bags for 1 month.
