Sponge cake is considered the foundation of Italian pastry.
If you can’t make it, I bet you add baking powder!
But I have to tell you that the ultimate cake base, which is the legendary sponge cake, is made with only 3 ingredients.
Flour, eggs, and sugar! Yes, it’s really easy with just a few tricks. You will have a super soft cake to fill with the creams you prefer.

  • 6 Eggs
  • 1 1/2 cups All-purpose flour
  • 3/4 cups Sugar (granulated)
  • Vanilla (extract)

  • 1 Electric Whisk
  • 1 Cake Pan 9.5-inch springform
  • 1 Spatula

Preparation

Now let’s prepare the sponge cake

  • For the preparation of the sponge cake, I recommend weighing all the ingredients.

    Then, put the whole eggs together with the sugar in the bowl of the electric mixer or stand mixer (with the whisk attachment).

    At this point, start beating the egg and sugar mixture until tripled in volume. They should be white, frothy, and soft.

    Meanwhile, put the flour in a sieve and sift it.

    This step is very important for two reasons:

    1- it allows us to clean the flour from any impurities;

    2- it will be easier to incorporate it into the batter;

    Now remove the egg and sugar mixture from the mixer.

    And then proceed to incorporate the flour, mixing from top to bottom to not deflate the mixture; you can also add vanilla or another flavor.

    Once all the flour is absorbed, gently pour the mixture into the 9.5-inch pan, previously buttered and floured. (do not tap the pan and do not level the mixture).

    Bake in a preheated oven at about 340 degrees Fahrenheit for about 35/40 minutes.

    Our sponge cake will be done when it slightly detaches from the sides.
