Ingredients to prepare Pavesini coffee and mascarpone truffles

  • 6.3 oz coffee-flavored Pavesini (7 small packs)
  • 1 cup mascarpone
  • 1/4 cup powdered sugar
  • 1 espresso cup coffee (about 1.7 oz)
  • 2 tbsp rum
  • to taste sweetened cocoa powder

Tools

  • Bowls
  • Wooden spoon
  • Food processor
  • Coffee machine

Steps to prepare Pavesini coffee and mascarpone truffles

  • To prepare Pavesini coffee and mascarpone truffles, first, prepare an espresso cup of coffee with either the coffee machine or the moka pot and set it aside. I used the coffee machine in this case; it should be slightly cooled (an espresso cup of about 1.7 oz of coffee). In a bowl, put the mascarpone and powdered sugar and mix everything, helping yourself with a wooden spoon. Once it has cooled, add the coffee and mix. Finely chop the coffee-flavored Pavesini using a food processor and add them to the mascarpone mixture a little at a time. Lastly, add 2 tablespoons of rum and mix well. Put in the fridge to rest for at least 1 hour.

  • Take the mixture out of the refrigerator, take a portion, and mold it between your hands (slightly moistened) to form balls. Now roll the balls in cocoa powder. You can choose unsweetened or sweetened cocoa to taste; I chose sweetened cocoa powder.

  • Then place your balls in paper cups on a plate or tray and put them back in the fridge until ready to serve. You can coat them with rainbow sprinkles, chocolate sprinkles, or simply roll them in cocoa powder.
