Ingredients

  • 3 cups all-purpose flour (or cake flour)
  • 3 eggs (medium)
  • 1/2 cup sugar
  • 1 1/4 cups fresh liquid cream
  • 1 tbsps baking powder
  • lemon zest
  • 4 cups peanut oil
  • granulated sugar
  • ground cinnamon

Steps

  • Mix eggs and sugar in a bowl; you can use either a hand whisk or a fork.

  • Pour in the cream and mix.

  • Add sifted flour and baking powder.

  • Grate the washed and dried lemon zest directly onto the powders.

  • Thoroughly mix all ingredients until you obtain a smooth batter.

  • Pour the oil into a pan and wait for it to reach between 311 and 320°F. If you don’t have a thermometer, you can dip the tip of a long toothpick into the oil and check for bubbles forming around it.

  • With the help of a spoon, drop small amounts of batter into the hot oil, no more than 5-6 pieces, and let each piece take a round and golden shape. Drain well and let dry for a few minutes on absorbent paper.

  • Roll the still-warm fritters in a plate with sugar and cinnamon.

Notes:

They stay soft for one, at most two days; if you want, you can warm them up for a few seconds in the microwave.
