Tyrolean Dumplings

The Tyrolean dumplings are medium to large-sized bread dumplings typical of my region.. Trentino Alto Adige! It’s a perfect recipe for recycling stale bread. It’s a very rustic and ancient dish. They are made with stale white bread, parsley, eggs, speck, and onion. Many people prefer to grind the bread for a perfect consistency and to compact them better. I cut the bread into pieces as per family tradition. They will be a bit more rustic.. but back then food processors didn’t even exist! Ingredients for making Tyrolean dumplings

  • 8.8 oz stale bread
  • 1 cup whole milk
  • 1 white onion
  • 10.6 oz speck
  • 2 eggs
  • 2 tbsps parsley
  • 1 tbsp all-purpose flour
  • to taste salt
  • 0.7 oz butter

Steps to make Tyrolean dumplings

  • To prepare the Tyrolean dumplings, first cut the stale bread into small pieces. The smaller they are, the better they will blend. Put it in a large bowl and meanwhile heat some whole milk. When it’s warm, add it to the stale bread and let it soak for 15 minutes. Meanwhile, cut the speck into thin strips. Then cut the speck into small cubes.

  • Also slice 1 onion thinly and sauté it together with the speck in 0.7 oz of butter for about 5-6 minutes. I used mountain butter to add more flavor. When the mixture has cooled, add it to the bowl and then add 2 eggs, 2 tablespoons of parsley, 1 tablespoon of all-purpose flour. If the mixture is too dry, add a little more milk. If it is too sticky, add a little more flour.

  • Now moisten your hands with some water and start creating the dumplings by rotating the mixture and forming medium-sized balls. Place them on a tray or a large plate. When they are ready, you can start cooking them in broth. It will take 15 minutes from the boiling point. Serve the Tyrolean dumplings hot.

You can store the cooked dumplings for 1 day in the refrigerator

If you want to prepare the dumplings with melted butter instead of cooking them in broth, cook them in salted water and let them cook for 15 minutes. Then prepare the melted butter.
