Today, salmon poke, intrigued by always hearing my son and his girlfriend mention poke, I did some research and made it at home. This salmon poke is an easy-to-make dish, very light and very scenic, a dish of Polynesian origin. Poke is also perfect to take to the office or for a picnic outdoors. Ingredients for Salmon Poke
- 3/4 cup Ribe rice
- 5.3 oz smoked salmon
- 1 cucumber
- 1 carrot (medium-size)
- 2 tsp poppy seeds
- 2 tsp freeze-dried red onion
- 2 tsp freeze-dried beetroot
- 1 tbsp extra virgin olive oil
- as needed lemon zest (grated)
- 1 pinch salt
- 1 pinch pepper (freshly ground)

Preparation of Salmon Poke
To start, bring water to a boil, salt it, and when it boils, add the rice. Cook until al dente, drain it, and put it in a glass bowl. Season with olive oil, mix with the help of two spoons, and let it cool completely.
Meanwhile, prepare the vegetables: clean the cucumber, clean the carrots, and cut both into spaghetti with the spiralizer. Set aside.
Cut the smoked salmon into small pieces, set aside.
When the rice is cold, assemble the poke as follows: place the rice in the bowl, add the salmon on one side and season it with grated lemon zest and a pinch of pepper.
Next to the salmon, arrange the spiral carrots, and next to the carrots, the spiral cucumbers (leaving one side only rice as seen in the photo), season with a pinch of salt.
Sprinkle the freeze-dried onion and beetroot on top, and finally, the poppy seeds. Serve and enjoy!
