Its preparation is very simple, making it undoubtedly a quick side dish to prepare, perhaps for large dinners with friends: it will surely be appreciated by all, being a vegetarian recipe.
Furthermore, the composition of the ingredients makes it a satisfying and economical dish.
This recipe reminds me of my childhood, a recovery recipe. When mom opened the fridge and maybe found a red pepper, a yellow one, two zucchinis, an eggplant alone, they wouldn’t make much, but together with three potatoes and an onion, she managed to prepare a side dish to fill the stomachs of us five children, obviously with a protein on the side, which could be meat, fish, or cheeses.
It was a festival of colors and flavors, so good.
The fricassee is a dish that can be enjoyed either hot or cold.
It’s a side dish you can use to dress pasta or prepare excellent crostini.

Ingredients for the Fricassee
- 2 eggplants (small)
- 2 bell peppers (1 red, 1 yellow)
- 1 onion
- 14 oz potatoes
- 3 zucchinis (medium)
- 2 cloves garlic
- 1 bunch basil
- salt
- pepper
- extra virgin olive oil

Steps for Vegetable and Basil Fricassee
Wash the vegetables.
Peel the potatoes, wash them, and cut into wedges. Peel the garlic and the onion.
Cut all the vegetables into irregular pieces.
If you prefer a very rustic effect, leave the vegetables in large chunks.
Sauté the thinly sliced onion and garlic cloves, then add the sliced potatoes.
Cook the potatoes for 3-4 minutes, stirring.
Then add the other vegetables.
Mix, add salt, and a sprinkle of pepper.
Mix often, put the lid on, and then stir again.
Lower the heat, cover with the lid, and cook for 25-30 minutes, or to your taste.
Add the basil almost at the end. (You can add marjoram and oregano to taste).
Your vegetable fricassee is ready. You can enjoy it immediately, but it’s even better if left to rest for a few hours.
