- 1.1 lbs anchovies (fresh)
- 1 cup vegetable oil
- 0.4 cups flour
- to taste salt
- to taste pepper

Steps for Fried Anchovies without Eggs
Clean the anchovies by removing the head and the central bone, or buy them already cleaned at the fish market. Dry them well with a cloth. In a food bag, put the flour and then add the anchovies a few at a time, shaking the bag well to coat them with flour. This way you won’t dirty any additional dishes.
In a large pan, heat the vegetable oil well and then, a few at a time, fry the anchovies until they are lightly golden. Drain them well on absorbent paper.
Once warm, season them with salt and pepper and serve with lemon slices. Our anchovies are ready and they are delicious!
Storage, Tips, and Notes
This frying is really light as we have used only flour. We can also use rice flour, making the frying even lighter and suitable for those intolerant to gluten.
I advise against freezing or storing in the fridge. It’s better to prepare a smaller amount and consume them.
