In my opinion, zucchini is the queen of the kitchen. I’ve made several recipes with zucchini because it’s a fantastic vegetable, rich in fiber and with a sweet taste.

The sausages provide saltiness, and the zucchinis add sweetness, making the mix balanced and very harmonious.

Of course, this dish can be made with regular pasta, but I love homemade pasta which adds an extra touch of flavor. I used fresh caserecce, but any type of pasta you prefer works.

Ingredients for Pasta with Zucchini

  • 11.3 oz pasta (caserecce, penne, farfalle, rigatoni)
  • 4 zucchini (medium)
  • 2 sausages
  • leaves basil
  • 1 clove garlic
  • 1.8 oz grated Parmesan cheese
  • to taste extra virgin olive oil
  • salt
  • pepper

  • Frying Pan

  • Pot

Steps for the Pasta

  • In a frying pan, brown a whole garlic clove with a drizzle of oil until golden.

    Add the zucchini previously washed, dried, and cut into chunks.

    Continue to cook for another 5-6 minutes on high heat.

    Stir.

  • Then we can incorporate the crumbled sausage, lower the heat, and let it cook for about 6 minutes.

    Adjust with salt and pepper and throw in a few basil leaves torn by hand.

    Remove the garlic clove.

  • Meanwhile, cook the pasta in plenty of salted water.

    Once ready, drain the pasta al dente and transfer it to the pan with the sauce.

    Turn off the heat and mix everything with grated cheese, possibly adding a little cooking water.

    Mix thoroughly to bind the pasta to the sauce.
