Ingredients for Homemade Truffle Burgers
- 21 oz ground veal
- 3 tbsps truffle sauce (generous)
- 1 egg
- to taste fine salt
- to taste mixed peppercorns (freshly ground)

Preparation of Homemade Truffle Burgers
In a bowl, pour the ground veal, adjust with salt (just a pinch is needed) and add plenty of freshly ground pepper, quickly mix with a spoon.
Now add the egg and the truffle sauce, mix well with your hands (perhaps wearing latex gloves suitable for food contact) until you get a homogeneous mixture, leave in the bowl, cover with plastic wrap and let rest in the fridge for at least 2 hours.
After resting in the fridge, divide the dough into 3 equal parts (you get 3 burgers each about 7 oz), pass each portion of meat through the burger press, and place the formed burgers on a tray with parchment paper and voilà, it’s time to cook and enjoy!
You can cook the burgers in a non-stick pan with a splash of oil for 6 minutes per side (or according to your preferred level of doneness), or in the oven at 392°F (200°C) for 15/20 minutes, or if you prefer, you can quickly sear them on a very hot cast iron grill for 4 minutes per side.
