This very quick version is perfect for being prepared at the last minute, even with unexpected guests or for a quick snack for an afternoon break or to watch a game on TV with friends.
These mini pizzas are perfect to bring to the table tasty, with little expense and in little time. They will make both adults and children happy, and what a joy to see their faces enjoying them still warm.
Today, we propose mini pizzas made with puff pastry, which can be easily found in all supermarkets.
We went with the classic tomato and mozzarella mini pizzas… but if you prefer, you can also fill the puff pastry mini pizzas with diced cooked ham, replace the mozzarella with diced provola, or replace the anchovies with tuna pieces.
In short, you can top them with whatever you like.

Ingredients for Puff Pastry Mini Pizzas
- 1 roll puff pastry (round or square as you prefer)
- 12 tablespoons tomato purée
- 4.4 oz mozzarella
- 1 tablespoon extra virgin olive oil
- salt
- 1 egg yolk (to brush the mini pizzas)
- to taste dried oregano (optional)
Tools
- Plate
- Parchment paper
- Pastry cutter
- Small bowl
Steps for Mini Pizzas
To prepare puff pastry mini pizzas, start by rolling out the puff pastry sheet. Use a pastry cutter about 2.75 inches in diameter to cut out circles.
(If you don’t have a pastry cutter, use a glass).
Poke holes in the puff pastry disks with a fork, without reaching the edges
Then place the mini pizzas on a baking sheet lined with parchment paper, brush them with the beaten egg yolk.
In a small bowl, season the tomato purée with oregano, salt, and oil and set aside.
(In my case, I didn’t add oregano).
Top the mini pizzas by placing a teaspoon of tomato sauce in the center. Then bake the mini pizzas in a preheated static oven at 392 °F for 7 minutes.
Meanwhile, chop the mozzarella into very small cubes.
After 7 minutes, take the puff pastry mini pizzas out of the oven, and then place a heap of mozzarella in the center.
Bake again for a few minutes until the mozzarella is melted and the edges of the mini pizzas are golden.
Enjoy your meal.
Tips
Puff pastry mini pizzas are best eaten immediately but can be stored for a day in an airtight container, and then reheated in the oven.
And what about the leftover puff pastry scraps, should we throw them away? Absolutely not, I joined them like a puzzle and made more mini pizzas.
