Ingredients for Fairy Tale Eggplants with Tomato
- 14 oz fairy tale eggplants
- 15 piccadilly tomatoes
- chopped parsley (fresh)
- 1 clove garlic
- salt
- 3 tbsps extra virgin olive oil
- 3 leaves basil
Tools
- Pan – non-stick (large) with lid
- Wooden Spoon
Preparation of Fairy Tale Eggplants with Tomato
Wash the red cherry tomatoes, then cut them in half.
Wash the fairy tale eggplants and remove the stem.
Dry them.
My personal taste is to cut them in half.
(If you want, you can leave them whole).
Heat a little oil in a large pan and let a clove of garlic brown.
(If you like, you can add a piece of hot chili pepper).
Remove the garlic and add the fairy tale eggplants.
Cover with a lid, leaving it slightly ajar.
They should cook for 6 minutes, stirring often.
Add the tomatoes cut into wedges, season with salt, and continue cooking for about 15 minutes, stirring with a wooden spoon.
At the end of cooking, sprinkle with freshly chopped parsley.
A dash of pepper and a few basil leaves and the fairy tale eggplant side dish is ready.
Garnish with a sprig of basil.

Tips
If you like, you can bake them in a pan at 350°F for 20/25 minutes.
