Bruschetta with Grilled Peaches and Stracciatella.

The bruschetta with grilled peaches and stracciatella is a blend of rustic and modern flavors that captivate from the first bite.

Original and tasty, they always attract the attention of guests.

The base is a slice of rustic bread lightly toasted: the toasting not only adds crunchiness but also releases cereal aromas and creates a rough surface capable of holding the toppings well. On top of the bread, the fresh stracciatella, creamy and buttery, contrasts with the crunchy texture of the bread.

The originality comes from the grilled peaches, where the grill caramelizes the fruit’s natural sugars. This effect perfectly balances the flavors creating a sweet and sour contrast.

Simple to prepare but always grabs attention.

Steps to Prepare the Bruschetta

Heat a grill and place the bread slices, you can find the recipe for excellent homemade bread by clicking HERE, and toast them for 3-4 minutes per side, until crispy with light golden stripes.

Thoroughly wash the nectarines under running water, pat them dry with some paper towel or a cloth, and slice them into wedges.

Lightly oil the grill and cook the peaches for 2-3 minutes per side, until the typical dark grill marks appear and their caramel aroma is released.

  • Place the grilled bread slices on a serving plate and spread the stracciatella, then arrange the peach slices on top. Drizzle with a little honey and sprinkle with pistachio crumbs, and the bruschetta is ready to be served and enjoyed

Storage

Ready-made bruschetta: it is not recommended to store them already prepared. The bread becomes soggy due to the stracciatella and peaches. It’s better to consume them immediately after preparation.

Grilled peaches: you can grill them and store them in the fridge, in an airtight container, for 1-2 days. It’s better to bring them back to room temperature or slightly warm them before use.

Stracciatella: should be kept in the fridge, in its brine, consumed by the indicated date

Toasted bread alone: you can toast it in advance and store it in an airtight container at room temperature for a maximum of 1 day
