Fresh Salad with Yogurt Dressing: in summer, there is no dish more loved and versatile than salad. Light, colorful, and full of flavor, it is perfect for any occasion. This time, I chose to prepare a very simple but delicious version with cucumbers, tomatoes, Tropea red onion, and a creamy yogurt dressing that makes everything even fresher. A quick salad to prepare, ideal to serve as a side dish, to take for lunch break, or even to the beach. You can pair it with cheese, cured meats, tuna, or whatever you have in the fridge: the result will always be tasty. You only need a bowl, a few minutes, and you’re done! And if you prepare it in advance, you can store it in the fridge for a couple of days, ready to enjoy at any time.

Ingredients

  • 1 cucumber
  • 2 San Marzano tomatoes
  • 1/2 Tropea red onion
  • yogurt dressing

Preparation

  • Let’s start preparing the fresh salad with yogurt dressing by thoroughly cleaning the cucumber. Remove both ends, then rub the tips together to eliminate excess milky sap. At this point, peel the skin completely and slice the cucumber using the mandoline for thin and even slices.
    Next, wash the tomatoes thoroughly under running water and slice them thinly using the mandoline or a knife.
    Finally, clean half a Tropea red onion, remove the outer layer, and grate it directly over the tomatoes and cucumbers to add an extra touch of flavor.

  • Now, we just need to add our yogurt dressing: I used about 7 oz (200 grams), but you can adjust based on your taste and desired creaminess. Mix all the ingredients in a large bowl until the dressing is well distributed.
    Our fresh salad with yogurt dressing is ready to be enjoyed immediately, or you can store it in the fridge, covered, for a couple of days.

This salad is truly versatile and lends itself to a thousand variations. You can enrich it with diced cheese, drained tuna, or a few slices of cured meat to make it even more complete. Or you can simply accompany it with croutons or a small focaccia: it will still be a light but flavorful dish. Perfect to take to the office for lunch, to enjoy under the umbrella, or to serve alongside other dishes at a summer lunch. It takes only a few minutes to prepare, but it always makes a good impression!
