Couscous with pesto and cherry tomatoes is a quick summer recipe, perfect for those with little time but who don’t want to compromise on flavor. It takes just 10 minutes to prepare and is ideal to take out: just store it in the fridge and bring it to room temperature before enjoying it, perhaps with a few seconds in the microwave if you prefer it slightly warm, as I do.
You can use homemade or store-bought pesto, the result will still be fresh and tasty. It’s always a great idea for lunch because it fills you up without being heavy. A practical, colorful, and light solution, perfect for summer!
