I love crumble cake, especially with ricotta cream. For my birthday, I decided to make it. It is very easy to prepare and very tasty. Moist, it melts in your mouth. I flavored both the pastry and the ricotta cream with lemon. But it’s also delicious with orange. I used the Thermomix, but it can easily be made by hand or with a stand mixer.

Ingredients
- 3 1/2 oz Butter in pieces
- 2 1/2 cups All-purpose flour (Type 00)
- 1 Egg
- 1 packet Baking powder for cakes
- 1/2 cup Granulated sugar
- 1 Lemon (zest without white part)
- 3/4 cup Sugar
- 1 Lemon (zest without white part)
- 1.1 lbs Ricotta cheese (sheep)
- 4 tsp Liquor (I use Villacidro Murgia)
- to taste Vanilla

- Pan 26 cm Springform

Steps
In the Thermomix bowl, pour the flour, sugar, butter, egg, and baking powder and mix for 20 seconds at speed 5.
Add the lemon zest and mix for another 5 seconds at speed 5.
Transfer 1/3 of the mixture to the bottom of the pan. I recommend using a sheet of parchment paper on the bottom of the pan. It will be easier to remove from the pan later.
Without washing the bowl, add the lemon zest and sugar and pulverize for 20 seconds at speed 10. Add the ricotta and the liquor and mix for 20 seconds at speed 4.
Add the vanilla and mix for another 10 seconds at speed 4.
Transfer the cream onto the previously prepared base.
Cover with the remaining dough. Bake for about 40 minutes at 350°F (180°C).
Delicious!!!!
