With the heat of these days, I decided to prepare a fluffy bundt cake in the Versilia oven: a perfect breakfast dessert without needing to turn on the oven.
It was my first attempt with this type of cooking, and although it’s not easy to use at first, the result really surprised me! Online you can find many instructions, but each stove has its peculiarities, so it takes a little practice to get the hang of it.
I used the medium burner, keeping the flame medium for 8 minutes, then lowering it to almost minimum for another 35 minutes of cooking. Once turned off, I let the cake cool completely before unmolding it, and I must say it turned out tall, fluffy, and fragrant.
In short, although it may seem complicated at first, the Versilia oven proved to be a real ally: soon I will use it again, perhaps for bread or other rustic recipes. In summer, it’s a great alternative to the traditional oven and lets us rediscover the scents of the past.

- 4 eggs
- 1 1/4 cup sugar
- 3/4 cup milk
- 3/4 cup vegetable oil
- lemon flavoring (or your preferred flavor)
- 2 3/4 cup all-purpose flour
- 1 packet baking powder

Preparation
In a large bowl, break the eggs and add the sugar. Using an electric whisk, beat the mixture for a few minutes until it is light, fluffy, and foamy: it’s important for the eggs to be well beaten, as this will make the bundt cake fluffier.
Always continuing to mix with the electric whisk, gradually add all the other ingredients, following the order listed. Mix well until you have a smooth and homogeneous batter, ready to be poured into the Versilia oven.
When the batter is ready, carefully grease the Versilia oven with a little oil (or butter, if you prefer). Pour all the batter inside, leveling it gently with a spatula. Finally, close it well with its lid, making sure it is properly sealed.
At this point, just bring the oven to the stove. Place the flame spreader (the cone provided with the oven) on the medium burner and position the closed oven on top. Turn on the heat and let it cook over a medium flame for about 8 minutes to start the cooking well.
After this time, lower the flame to the minimum and let it cook for another 35 minutes, without ever opening the lid.
To check the cooking, you can use the holes on the lid: just insert a long skewer stick. If it comes out dry, the bundt cake is ready!
At this point, turn off the heat and let it cool completely in the oven before unmolding. This step helps keep the shape and softness of the cake intact.
NOTES
When using the Versilia oven, it’s important to start with a slightly higher flame to start the cooking well, then lower it immediately to the minimum to avoid burning the base. Every stove has its power, so at first, some tests are needed to find the right balance.
To check the cooking, always use the holes on the lid by inserting a skewer: if it comes out dry, the bundt cake is ready. The first check should be done only after at least 30 minutes, without ever opening the lid before, to not disperse the heat.
Never raise the flame to cook faster, otherwise you risk burning the bottom.
