Ferrero-like Cream

Hello everyone! 🌸 Today I’m talking about the Ferrero-like cream, a true delight that reminds you of the filling of the famous chocolates! 🍫✨ It’s a delicious cream, perfect for filling cakes, and the best part is that it takes no time to prepare without cooking. Just mix hazelnut cream, chopped hazelnuts, and wafer cookies to achieve an irresistible consistency. 😍
I must admit that lately I use it less because I prefer softer spoonable creams, but this remains a great choice for those who love rich and enveloping fillings. Of course, I’ve personalized the recipe to make it lighter and more balanced… and I guarantee the result is delicious! 💛
This cream is always very appreciated: everyone is fascinated by its flavor! When I use it to fill cakes, I often pair it with another more delicate cream, like pastry cream or Camy Cream, to create a perfect balance of taste and texture. 💛

Before moving on to the recipe, I remind you of some bases that pair perfectly with this filling.

Ingredients

  • 1 3/4 cups hazelnut cream (or Nutella)
  • 1 cup heavy cream
  • 1 1/4 cups hazelnuts (toasted and chopped)
  • 12 hazelnut wafers (chopped)
  • to taste maraschino (or rum)

Tools

  • 1 Chopper

Preparation

  • First of all, let’s prepare the ingredients: with a chopper, finely chop the toasted hazelnuts and wafers until reaching a homogeneous texture.
In a bowl, pour the hazelnut cream and the liquid heavy cream (without whipping it). Keep a bottle of Maraschino or Rum on hand, which we will use to slightly dilute the cream to reach the desired consistency.

  • Now, we just need to mix by hand with a whisk the hazelnut cream and the heavy cream until obtaining a homogeneous mixture. Then add the chopped hazelnuts and wafers: our cream is already delicious like this, but to make it even softer and easier to serve with a spoon, we can add a bit of liquor. Just a few grams will be enough, just enough to slightly dilute it without altering its flavor. 😊✨

NOTES

If you prefer to avoid the liquor, you can substitute it with a bit of milk or liquid cream to still achieve a softer consistency.

Store it in the refrigerator in an airtight container for a couple of days. Before using, leave it at room temperature for a few minutes and mix it well.

FAQ (Frequently Asked Questions)

  • Can I make this cream without chopping the hazelnuts and wafers?

To achieve the right consistency, it is important to chop the hazelnuts and wafers. If you don’t have a chopper, you can use a mortar to finely crush them.
