Cowboy Beans

The cowboy beans are a simple and quick dish, yet incredibly flavorful, thanks to the seasoning made of garlic, oil, chili pepper, and rosemary. The name seems to come from the fact that canned beans are used in the preparation with their preservation liquid, just like the cowboys, who needed long-lasting foods to carry with them. Personally, I believe the real reason for the name lies in the bold, spicy, and rich flavor. When accompanied by toasted bread, these beans make for a dish as simple as it is delicious, which can also be an excellent main course.

The preparation is really quick: in about 10 minutes, you’ll have your cowboy beans ready to serve at the table.

Ingredients

  • 1 can canned borlotti beans
  • 1 clove garlic
  • 1 tbsp extra virgin olive oil
  • salt
  • chili pepper
  • 1 sprig rosemary

Preparation

  • The preparation is really simple: start by cleaning the garlic clove and chopping it into pieces, then place it in a pan with the chili pepper and oil, allowing it to sauté. When the garlic turns golden, add the contents of the can of beans, including their cooking liquid. Adjust the salt, cover with a lid, and cook over high heat for about 10 minutes, stirring the beans at least once and ensuring the liquid does not dry out too much. At the end of cooking, turn off the heat and add a sprig of rosemary, mixing well. The cowboy beans are ready to be served!

NOTES

Cowboy beans are perfect when served hot, but they also lend themselves well as an appetizer or snack for aperitifs, perhaps served in single portions or on bread croutons. They can be prepared in advance and stored in the fridge for a couple of days, maintaining all their flavor and goodness.
