Light Lasagna in Jar Cooking is a new recipe to add to my Jar Cooking First Courses, a light recipe perfect for those following a diet but who don’t want to miss out on a treat and a bit of flavor every now and then!
The light lasagna is cooked using the microwave jar cooking technique, with which, for those who know me, I have cooked numerous lasagnas, among which I cannot fail to mention the Bolognese Lasagna in Jar Cooking, the Sorrentina Lasagna in Jar Cooking, and the Lasagna Rolls in Microwave Jar Cooking.
This version resembles my Zucchini Lasagna in Jar Cooking, but with the addition of cherry tomatoes, and also, I replaced the classic Microwave Cooked Béchamel with a lighter ricotta cream!

Ingredients
- 5.6 oz ricotta
- 0.7 oz grated Parmesan cheese
- 1 egg
- salt
- pepper
- 3 egg lasagna sheets (thin)
- 1 zucchini (small)
- 8 cherry tomatoes
- 0.7 oz grated Parmesan cheese
What You Need to Cook Light Lasagna in Jar Cooking
- 1 Microwave Oven
- 2 Jars 500 ml with thin seal
Steps
Wash a zucchini and trim it.
Slice the zucchini thinly using a mandoline.
Slightly salt the zucchinis and set aside.
Put the ricotta in a bowl.
Add the grated Parmesan cheese.
Add the egg, salt, and pepper and mix.
Pour a little extra virgin olive oil inside two jars with thin seals.
Break each egg lasagna sheet into 4 pieces.
Place a lasagna sheet on the bottom of each jar.
Put some sliced zucchini and the washed and chopped cherry tomatoes.
Add a tablespoon of ricotta cream and cover with another piece of lasagna sheet.
Proceed in the same way to create three layers.
Finish with cherry tomatoes and zucchini on top.
Add a bit of grated Parmesan cheese on top.
Finally, clean the edges, close each jar with its lid with a seal and secure with 4 clips each jar.
Cook one jar of light lasagna in jar cooking in the microwave at a time, for 5 minutes at your tested power (I use 600W).
At the end of cooking each jar, let it rest for 20 minutes in the heat to complete the cooking.
Serve the lasagna after resting by removing the clips and slightly pulling the seal.

The light lasagna in jar cooking can be stored, still vacuum-sealed, for two weeks in the refrigerator.
