Shortcrust Pastry is an excellent base for creating a variety of savory pies and appetizers, always adding a pleasant crunch to our dishes. Although its origins are French, it has found a special place in Italian culinary tradition. Making it is a breeze: just a few ingredients like flour, butter, water, and salt, and it’s ready in a few minutes. It doesn’t require rising or rest times, so we can use it immediately. However, it can be made in advance and stored in the refrigerator wrapped in cling film for a few days. This silky-tasting dough is perfect for creating savory snacks, even in single servings, which we can fill with cold cuts, vegetables, cheeses, and delicious savory creams like pumpkin.

Preparation

  • For practicality, it’s helpful to weigh all the ingredients before starting to knead. This way, you’ll have everything on hand and can work more efficiently without interruptions.

  • Simply combine all the ingredients in the food processor and start it at high speed. In my model, the large rotating blade is used. At first, you’ll notice the dough crumbles, but after a few seconds, it will come together. Towards the end, for an even consistency, it’s advisable to proceed with short pulses. Overall, it will only take a couple of minutes.

  • When the dough is compact, transfer it to a lightly floured work surface and knead it into a nice loaf. At this point, you can use it immediately to make savory pies and tasty snacks, or store it in the refrigerator wrapped in cling film, ready for use when needed.
