Sweet and Sour Pearl Onions

Ingredients

  • 12 oz pearl onions (peeled)
  • 2 tbsps extra virgin olive oil
  • to taste salt
  • to taste pepper
  • 1 tsp sugar
  • 1 tbsp vinegar

Preparation

  • The process is really simple: just wash the peeled pearl onions and put them in a small pot. Add salt, pepper, and oil, then cover with the lid and place the pot on high heat to brown them on all sides. It’s important to turn them often to prevent burning, ensuring they color evenly.

  • When the pearl onions are well browned, add the teaspoon of sugar and tablespoon of vinegar. Lower the heat slightly and, keeping the lid on, let them cook for another 10-15 minutes until they become soft and caramelized. If the juice reduces too much due to high heat, don’t worry: just add a little water while they continue to cook.
