Preparation

The preparation of pan-fried roasted potatoes is simple and quick.

  • The first step is to peel and rinse the potatoes under running water. Then cut them into chunks as evenly as possible for even cooking. Place the cut potatoes in the pan, add the oil, large chopped garlic, season with salt and pepper, and place on the stove over high heat, cover with the lid, and let them roast, turning them occasionally to prevent burning.

    When they are well browned, add the small glass of water, the rosemary sprig, and, still covered with the lid, complete the cooking by slightly lowering the heat.

    When the potatoes are cooked, you can tell by poking them with a fork: they should be soft. Increase the heat and let all the water evaporate, returning them to a crisp state on the roasted side.
