Friggitelli

The friggitelli are small peppers with a sweet flavor; we usually buy them green, but during ripening, they also turn yellow and then red.

In this recipe, I used the red friggitelli, which have a more delicate and sweet flavor.

With friggitelli, we can prepare a light, tasty, and quick-to-prepare side dish. Cooked directly in a pan with a few simple ingredients such as oil, garlic, and coarse salt, we will get a truly succulent side dish. The tender and crunchy flesh is perfectly suited for pan cooking, where it becomes irresistibly sweet and slightly smoky.

Ingredients

  • 1.1 lbs friggitelli
  • 2 tbsps extra virgin olive oil
  • to taste coarse salt
  • 2 cloves garlic
  • 1/4 cup white wine

Tools

For cooking, I recommend a good non-stick pan of 28/30 cm (about 11 – 12 inches) in diameter with a lid.

Preparation

  • Wash the friggitelli well and reduce their stem. You can put them in the pan whole without needing to remove the stem and seeds. Add oil, salt, and garlic cloves. Place the pan on the stovetop with high flame, and, covering the friggitelli with a lid, let them roast well, stirring occasionally to cook them evenly.

  • When the friggitelli are well roasted, deglaze with some white wine, let it evaporate a little, then lower the flame and finish cooking. In total, this generally takes about 35 minutes.

NOTES

Friggitelli are excellent consumed hot with good fresh bread, but especially in summer, they are also well accepted at room temperature because they remain very succulent. For those who love spicy food, you can add chili pepper during cooking.
