Bellini

The Bellini is an iconic cocktail born in the 1930s, made with the pulp of white peaches and added Prosecco. It is a sophisticated, fruity drink, very refined and cheerful; its rosy color and fresh taste make it ideal for hot summer days.

I decided to try the recipe, but not having white peaches available, I used the classic yellow-fleshed peaches and I have to say it was still a success. So my advice is not to miss out on making the Bellini just because you don’t have the variety of peaches required by the original recipe.

The color will obviously vary depending on the type of peach used, but the fruity and fresh taste will remain exceptional.

The preparation of this cocktail is really simple and quick: you just need to use a blender for the peach pulp, fill the glass with peach one-third full, and add chilled Prosecco to fill the glass.

It is a cocktail usually loved even by those who do not enjoy alcohol very much because it is really fresh and intoxicating.

Ingredients

  • 1 peach (large)
  • A few drops lemon juice
  • 6.8 oz prosecco

Tools

  • 1 Blender
  • 2 Glasses
  • 1 Strainer

Preparation

  • Wash and peel the peach, cut it into pieces and put it in the blender.

  • Blend the peach well to make it pulp. Add a few drops of filtered lemon and blend again to make it smooth and fine.

  • Fill the glass one-third full with the peach pulp.

  • Fill the rest of the glass with well-chilled Prosecco and your Bellini is ready to be enjoyed.

NOTES

As previously mentioned, the original Bellini recipe calls for white peaches, but since they are more difficult to find, you can use classic peaches, including nectarines.

Normally, one large peach is enough for one person, but remember that the correct proportion is 1/3 peach pulp and 2/3 Prosecco; therefore, if you use larger glasses, you might need a second peach.
