The shortcrust pastry recipe I propose does not require resting time in the fridge before being used.

The crumbly texture of the base perfectly contrasts with the sweetness and softness of the jam.

Once filled, the tart is decorated with a series of thin strips of shortcrust pastry, which not only adds an aesthetic touch but also provides an even crunchier texture. You can choose to decorate the tart’s surface by cutting the shortcrust pastry with cookie cutters, creating unique decorations each time.

Not fully covering the surface with pastry creates a beautiful color contrast between the golden pastry and the chosen jam color. The jam tart captivates both the eyes and the palate at first glance and bite.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter (softened)

  • 1 egg yolk
  • 9 oz jam
  • to taste vanilla flavor
  • 1/4 teaspoon baking powder

Preparation

  • The first step is to prepare the shortcrust pastry, you can knead by hand or use a stand mixer with the paddle attachment. If kneading by hand, make a well with the flour on the work surface, add all the ingredients inside and gradually incorporate them into the flour by stirring with a fork and then kneading more and more with your hands until you get a nice, smooth dough.
    For those using a stand mixer, just place all the ingredients in the bowl and start the mixer at a medium-low speed until it becomes a smooth dough, which you then bring to the work surface to form into a dough ball with your hands.
    My advice is to cover the base of the pan with parchment paper, as you see in the photo, allowing for easier removal from the pan after baking.

  • On a lightly floured work surface, begin rolling out the shortcrust pastry with a rolling pin to a maximum thickness of 1/2 inch and use it to cover the pan. You must cover the entire base and leave a raised edge of at least 3/4 inch, trim the excess with the pastry wheel and set aside to decorate the surface.
    Now cover the shortcrust base with the jam, spreading it evenly over the entire base. Then, take the excess shortcrust pastry and roll it out on a lightly floured piece of parchment paper. Unlike the base, this time roll the pastry very thinly, just a few millimeters thick. Cut strips slightly less than 1/2 inch wide from this pastry and arrange them on the tart in a lattice pattern, trimming the excess. Fold the edge of the tart over itself with the help of a fork to finish the entire circumference, pressing lightly to imprint the fork tines on the border. This will serve as decoration and prevent the edge from detaching from the jam during baking.

NOTES

The jam tart, in addition to being a delicious dessert, keeps well for several days at room temperature if covered in classic cake holders with lids.
