Camy cream, a sweet and creamy mascarpone-based cream, no cooking required.
The mascarpone gives the cream a rich and velvety texture, while its delicate and slightly tangy flavor pairs well with various types of desserts. Camy cream can be enriched with vanilla, liqueurs, hazelnut cream, or fresh fruit for different flavor variations.
This cream is loved for its enveloping sweetness and soft consistency, making it perfect to enjoy on its own or combined with other ingredients to create sophisticated and delicious desserts.
In this recipe, I provide the ingredients to prepare the basic version and the version with hazelnut cream or Nutella. These are the two creams I most frequently use for making decorated cakes.

- 3/4 cup sweetened condensed milk

To prepare the Camy cream, it’s important to have an electric whisk to whip the cream and mascarpone.

Preparation
Making Camy cream is really simple and quick. The first step is to whip the cream. Then, using the electric whisk in another bowl, whip the mascarpone with the condensed milk. Don’t worry if it seems to deflate at first; keep the whisk at maximum speed and you’ll see the mascarpone become nice and firm and airy again. Finally, gently fold the whipped cream into the mascarpone and condensed milk mixture, and your white Camy cream is ready.
For the Nutella version, the procedure is the same. Whip the cream with an electric whisk, then in a second bowl, whip the mascarpone, Nutella, and condensed milk. When they are nice and firm, gently fold in the whipped cream.

Camy cream is truly a delicious and velvety cream that can be enriched with various ingredients. If you want to add fresh or dried fruit, liqueurs, or chocolate chips, follow the basic procedure and add your preferred ingredient before the whipped cream.
With Camy cream, you can fill excellent cakes, prepare single-portion desserts, cupcakes, or even fill cream puffs. It keeps well in the refrigerator for a couple of days.
