Ingredients

  • 1 1/2 cups all-purpose flour
  • 7 tbsps butter
  • 3 1/2 tbsps water
  • 1 tsp salt (level)
  • 2 oz cooked ham
  • 3 tbsps cream cheese
  • A few artichokes in oil

Tools

  • 1 Food Processor
  • 1 Air Fryer
  • 1 Tart Pan

Preparation

  • Let’s make the homemade shortcrust pastry:
Gather all the shortcrust pastry ingredients in the food processor, ensuring you fit the blade suitable for tough doughs. Operate at maximum speed and let it work until the dough begins to compact forming a dough ball. Transfer it to the lightly floured work surface and knead it briefly by hand to make it more homogeneous and compact.

  • The shortcrust pastry is ready to be used immediately. On the lightly floured work surface, roll it out with a rolling pin to obtain an even thickness. Cover the base of the tart pan with the pastry (no need to butter or flour it), making sure it adheres well to the edges.

  • Now we just have to fill our savory tart. Place a layer of cooked ham directly on the shortcrust pastry base. Add the cream cheese and spread it evenly with the back of a spoon. Finish with a few artichokes cut into pieces, spreading them over the entire surface.

  • Cover the tart with a second layer of shortcrust pastry, sealing the edges well with your fingers. Poke the surface with a fork so it won’t puff up while baking. Cook in air fryer at 320°F for about 30 minutes, or until golden brown

NOTES

You can customize the filling with whatever you have in your fridge: cold cuts, grilled vegetables, creamy or cubed cheeses. It’s a perfect fridge-cleaning recipe, ready in no time!

This savory tart is also excellent at room temperature. You can prepare it in advance and take it with you to the beach, office, or an outdoor picnic.

FAQ

  • Can I prepare the savory tart in advance?

Yes! You can prepare it even the day before: it keeps well in the fridge, covered with cling film or in an airtight container. When serving, you can enjoy it at room temperature or heat it for a few minutes in the air fryer or oven.

  • Can I replace the cream cheese with another type of cheese

Of course! You can use ricotta, robiola, stracchino, or even a mix of leftover cheeses. The important thing is that they are creamy.
