Ingredients

  • 1 1/2 chicken breast (whole)
  • 4 oranges (juiced)
  • 2 tablespoons extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste thyme
  • 1 bunch parsley (chopped)
  • 2 cloves garlic

For cooking the chicken breast, I recommend using a non-stick pan to use few fats during cooking, with a diameter of 9.5/10 inches and high edges.

Preparation

The preparation of the orange chicken breast is not laborious and does not require marinating, but it is important to season the meat well by massaging it with aromatic herbs.

  • In a deep plate, combine salt, pepper, thyme, and finely chopped parsley with the knife. Mix them well to make them homogeneous and season and massage the meat with these.

  • Place the three pieces of whole seasoned chicken breast in the non-stick pan, pour in the two tablespoons of oil, cover with the lid, and place on the stove to brown the meat.

  • Brown the meat well on all sides, turning it whenever a part is nicely browned, but be careful not to pierce the meat with a fork when turning it. This will allow the meat to retain its natural moisture inside, keeping it tender.

  • Squeeze the juice of the 4 oranges and add it to the meat only when it is well browned.
    When you pour the orange juice, lower the heat slightly, keeping it medium-low throughout the cooking and keeping the meat well covered with a well-closing lid. Otherwise, help yourself by placing a wet sheet of parchment paper between the pot and lid. Cooking time depends on the size of the chicken breasts, but generally, it takes about 50 minutes in total.

  • When the meat is cooked, let it cool on a cutting board and check the orange juice sauce. If it is still too liquid, let it reduce a little more on the stove, but it should be abundant to be served over each slice of meat.

    When the chicken has cooled, slice it along the length of the meat, trying to make rather thin slices. Now you can decide whether to put it back in the pot to heat it or place it on the serving plate and cover it with the hot sauce.

NOTES

The orange chicken breast, as previously mentioned, is not only a pleasure for the palate but also visually thanks to its colors. It can be prepared in advance to cool the meat better and facilitate slicing, as you can heat it when you serve it, and it will keep its tender and flavorful meat thanks to the orange juice covering it.
