- 1 1/4 cups risotto rice
- 3 oz smoked salmon Re Salmone
- to taste mayonnaise
- to taste vegetable oil for frying (for frying)

Preparation of rice crackers
Pour the rice into 2 cups of slightly salted water and stir. At this point, let it cook until fully absorbed, without stirring, until it is very soft and well compacted.
Transfer it to a small baking sheet lined with parchment paper. Using the back of a spoon, flatten it well to form an even, compact layer. Let it cool completely, then cut it into small regular rectangles. Set aside for frying.Frying and preparation of ingredients
Heat plenty of vegetable oil in a deep skillet. When it’s hot, immerse a few rectangles at a time: in a few seconds they will puff up, becoming crispy and golden. Drain on absorbent paper and let cool. In the meantime, cut the salmon slices into strips and roll them up to form small roses, prepare the chives finely chopped. Also, prepare the mayonnaise in a piping bag or with a spoon.Assembly of the tartines
Place the rice crackers on a serving dish. Lay a rose of smoked salmon on each. Add a tuft of mayonnaise, to add creaminess and bind the flavors.
