Ingredients

New Potatoes with Rosemary

  • 2.2 lbs new potatoes
  • 4 tablespoons extra virgin olive oil
  • sprigs rosemary
  • 2 cloves garlic (unpeeled, for aroma)
  • to taste salt
  • pepper
  • to taste sage (optional)

Steps

New Potatoes with Rosemary

  • Parboil the potatoes in salted boiling water for 8-10 minutes.

    Drain and proceed with seasoning.

    Place the potatoes in a bowl. Mix the potatoes with oil, salt, pepper, garlic, and rosemary. I also added sage but it’s optional.

    Oven Cooking

    Spread on a baking sheet and bake in a preheated static oven at 392°F for about 40-50 minutes.
    Stir halfway through cooking

  • Air Fryer Cooking

    Place the potatoes in the basket, avoiding overcrowding. Cook at 374°F – 392°F for about 20-25 minutes.
    Shake the basket every 8-10 minutes for even crispiness.

  • The oven time is longer, but it’s ideal for large quantities.

    Remember, in both cases, check the doneness by pricking a potato with a fork: they should be tender inside.

Tips

For a richer and more intense flavor, you can replace 1-2 tablespoons of oil with the same amount of melted butter. Alternatively, for a finishing touch, add a knob of butter halfway through cooking (either in the oven or air fryer) to make them more golden and flavorful.

Garlic: For a stronger aroma, you can finely chop the garlic and add it together with the rosemary, rather than leaving it whole.

Spices: If you wish to vary, you can add a pinch of sweet paprika, turmeric, or thyme to the seasoning.
