Avocado toast with scrambled eggs and bacon

Ingredients

  • 6 slices bread (rustic or whole grain)
  • 1 avocado
  • 4 eggs
  • 2 slices cheddar
  • 6 slices bacon
  • lime juice
  • as needed extra virgin olive oil
  • as needed salt

Steps

  • To make the avocado toast, toast the bread in a pan or toaster until golden and crispy.

  • Prepare the avocado cream: blend the avocado pulp with the juice of half a lime, a pinch of salt, and a drizzle of extra virgin olive oil.

  • Heat a non-stick pan with a drizzle of oil and pour in the eggs. Cook gently, when the eggs start to set add the cheddar and stir with a spoon to break them up and achieve the scrambled effect.

  • In a small pan, toast the bacon slices without adding oil until they become crispy

  • Assemble the toast: spread the avocado cream on the bread slices, then add the scrambled eggs and finish with the crispy bacon.
