The cherry strudel is a delicious rustic summer dessert, consisting of a flaky and crunchy shell that encloses a rich filling of cherries and cookies.

Ingredients
- 2 cups all-purpose flour
- 1/4 cups butter
- 1 egg
- 1 tsp salt
- 1 tsp sugar
- 7 tbsp lukewarm water
- 4 cups cherries
- 1 oz plain cookies
- 3/4 cups brown sugar
- 1 tbsp butter
- 1 egg
- 3 tbsp brown sugar

Preparation of the cherry strudel
Prepare the strudel dough: in a bowl, mix the flour with the butter in pieces, salt, sugar, egg, and lukewarm water
Mix energetically until you get a firm dough
Knead the dough on a floured surface for a few minutes.
Let the strudel dough rest at room temperature under an overturned bowl or wrapped in plastic wrap for about 30 minutes
Pit the cherries and set aside. Roll out the dough on a floured sheet of parchment paper
Form a large rectangle a few millimeters thick
Brush the surface with melted butter
Distribute the crumbled cookies, taking care to leave the edges free
Add the cherries on top and sprinkle with brown sugar and, if you like, you can add a pinch of cinnamon.
Roll the strudel tightly on itself, using the parchment paper, and seal the edges well.
Place the strudel on a baking tray lined with parchment paper and brush with beaten egg
Make diagonal cuts along the entire surface
Sprinkle with brown sugar. Bake in a preheated oven at 355°F for 30 minutes.
