The flatbread with ricotta, potatoes, and bacon is a rich and delicious idea to enjoy with company as a single dish.
To make this recipe, I used some olive oil flatbreads and filled them with ricotta, boiled potatoes, and pan-fried bacon.

Ingredients
- 2 flatbreads
- 2 slices bacon
- 9 oz potatoes
- 3.5 oz ricotta
- to taste dried oregano
- to taste onion
- to taste extra virgin olive oil
- to taste salt
Steps
To make the flatbread with ricotta, potatoes, and bacon, first prepare the flatbreads at home or use ready-made ones.
Peel and clean the potatoes, then boil them in a pot with plenty of salted water.
In a pan, pour a drizzle of extra virgin olive oil, some chopped onion, and oregano. Slightly wilt the onion, then add the diced bacon.
Brown the bacon in the pan, then add the boiled, diced potatoes. Stir over low heat, then remove the pan from the heat and adjust for salt.
Heat the flatbreads on both sides on the griddle. Spread the ricotta on the flatbreads’ surface.
Fill the flatbreads with potatoes and bacon, then fold them in half.
Serve warm and enjoy your meal!
