The couscous with chicken and zucchini chips is a rich and tasty idea to enjoy as a main course or a single dish.
Also good cold, you can prepare this recipe in advance and enjoy it during a lunch break at the office.
For this recipe, I cooked the chicken in a pan and made fried zucchini chips in a pan. Lastly, I prepared the couscous and combined everything.

Ingredients
- 1/2 cup raw couscous
- 1/2 cup water
- 5.3 oz chicken breast
- 2 zucchini
- 1 clove garlic
- to taste basil
- to taste dried oregano
- to taste salt
- to taste extra virgin olive oil

Steps
To prepare the couscous with chicken and zucchini chips, lightly brown the chopped garlic in a pan over low heat with a drizzle of extra virgin olive oil. If desired, you can add curry and/or chili pepper.
Then add the chicken cut into cubes or strips. Also add a sprinkle of oregano and continue cooking, adding more water if necessary. Salt at the end.
Wash and trim the zucchini, cut them into thin slices. Then fry them in a small pan with hot extra virgin olive oil and some basil leaves.
In a pot (or bowl), pour the couscous and moisten it with boiling water. Cover with a lid and let it rest for 5 minutes. Then use a fork to fluff up the couscous.
Pour the couscous into the pot with the chicken and stir to combine the ingredients.
Also add the zucchini chips and serve. If desired, you can add grated Parmesan cheese. Enjoy your meal!
