The oatmeal cookies with raisins and chocolate are simple to make and have a rustic flavor.
I made these cookies at the request of my boyfriend, after watching the TV series Fargo. Tempted by this request, I got my hands in the dough and made a couple of attempts to test the recipe as best as I could.
I made lactose-free cookies that I cooked in an air fryer; in the procedure, you will also find instructions for baking them in the oven. Once you try these cookies, you won’t be able to do without them!

Ingredients
- 1 cup all-purpose flour (or whole wheat)
- 1 cup oat flakes
- 1 egg
- 1/2 cup brown sugar
- 1/3 cup sunflower oil
- 2 tsp baking powder
- 3/4 cup raisins
- 1/3 cup chocolate (dark or milk)

Steps
To make oatmeal cookies with raisins and chocolate, soak the raisins in warm water for 10 minutes in a bowl. Then drain and dry them.
In a bowl, combine the flour, oat flakes, and baking powder. Then add the raisins and chocolate (in pieces or chips) and mix.
In another bowl, beat the egg with the sugar, then add the oil and continue mixing to obtain a homogeneous mixture.
Pour the liquid ingredients into the bowl with the dry ingredients and mix until you get a consistent mixture.
With your hands, take a bit of the mixture and form the cookies.
Place the cookies in the air fryer basket lined with parchment paper and cook at 320°F for 8-10 minutes, until golden brown.
Alternatively, place the cookies on a baking sheet lined with parchment paper and bake in a preheated oven at 356°F for 12-14 minutes, until golden brown.
Once cooked, let them rest for 5 minutes then transfer them to the rack and let them cool completely. Enjoy!
