This cake is dedicated to all romantics like me… This is a recipe and not a movie; otherwise, at this point, the scene would change and you would hear some beautiful laughter. Well, I’m not a romantic, but since I’m a food blogger, meaning I share my recipe diary with anyone who wants to read it, I occasionally have to adapt to the dates marked on the calendar. This big Lady’s Kiss is made with the same ingredients as the pastries, but if you don’t feel like making them one by one, it’s the ideal solution. The result is the same, its particular fragrance, combined with the taste of chocolate, makes it a really special dessert. It’s not perfect, but this way it will be seen that you made it with your own hands and didn’t buy it from the pastry chef. If you’re big fans of desserts, like I am, you absolutely have to try it!

Ingredients

  • 3.5 oz almonds
  • 0.5 cup sugar
  • 0.5 cup butter (soft)
  • 1.2 cups all-purpose flour
  • 1 pinch salt
  • one-third teaspoon vanilla extract
  • 5.3 oz dark chocolate

Steps

This recipe, taken from an old Thermomix cookbook, is the best I’ve ever tried for making Lady’s Kisses. They look like those bought from the best pastry shops. The recipe includes the use of hazelnuts or almonds, but I prefer the version with almonds.

  • Put the sugar and almonds in the bowl and pulverize for 30 seconds at turbo speed. Be careful not to chop the almonds alone because they would release their oil and compromise the success of the dessert.

  • Gather and collect the scattered ingredients on the side of the bowl with a spatula. Add the flour, pinch of salt, and vanilla. Also add the butter in pieces, which should be soft, so take it out of the fridge at least half an hour before. Start the Thermomix for 10 seconds at speed 4. Give it a few more spins if the dough is not homogeneous, maybe mixing it first with a spatula.

  • Don’t worry if it looks separated, if it hasn’t formed a ball, the important thing is that it’s homogeneous. Pour it into a large enough bowl to contain it and compact it with your hands. The warmth of your hands will help the butter blend with the other ingredients. This dough is crumbly and delicate, it has the consistency of a shortcrust pastry, but it will struggle to stay together.

  • Cut a parchment paper sheet to the size of a baking sheet. Divide the dough into 2 parts and roll it out with the rolling pin. You should get 2 discs about 0.2 inches thick. If you love precision, you can cut them by placing a pan on top, but you can also do it by hand; it will be less precise like mine, but still delicious. Make sure to leave at least an inch of space between the discs, as they will expand during cooking.

  • Transfer the dough onto the baking sheet, without removing it from the parchment paper, gently.

  • Bake in a preheated oven at 320°F for 25 minutes.

  • Remove from the oven and let cool. Meanwhile, chop the chocolate for 20 seconds at turbo speed and melt it by cooking at 122°F for about 5 minutes at speed 4.

  • Wait a few minutes before pouring the chocolate; otherwise, it will be too liquid and spill out of the cake. Then place one disc on a serving plate, pour the chocolate in the center, and spread it with a spatula over the entire surface, leaving a small edge free, so it won’t spill out when you place the second disc on top.

How to prepare the Lady’s Kiss Cake without the Thermomix.

Proceed in the same way using a food processor to chop the almonds with the sugar and then mix and compact the ingredients in a bowl.

Chop the chocolate and melt it in a bain-marie or in the microwave (as done in this recipe)

You won’t be able to cut the cake into regular slices, but rather into chunks. You can store it for a few days in a cake container.
