Ingredients
- 4 cups all-purpose flour
- 1 tsp instant yeast
- 7 oz butter
- 1 cup milk
- 1/4 cup sugar
- 1 egg
- 1 lemon zest
- 12 oz mixed berry jam
- milk (for brushing)

Preparation of rose colomba
In a saucepan, heat the milk with the sugar without bringing it to a boil, stirring frequently. Remove the milk from the heat, pour it into the bowl, and let it cool slightly. Then add the instant yeast, mix with a whisk, and let it rest for 5 minutes.
Add the egg and gradually the flour. Start kneading first with a spoon, then with your hands
Then add the butter in pieces a little at a time, continuing to knead carefully for at least 5 minutes.
If using a stand mixer, ensure the dough is well kneaded on the hook and work it for about 10 minutes, until it starts detaching from the sides of the bowl.
Cover the bowl with cling film and let the dough rise in a warm place until doubled in size (about 2 hours).
Take the risen dough and flatten it with your hands
Roll it out with a rolling pin on a lightly floured work surface to form a rectangle measuring about 20 x 14 inches.
Spread the mixed berry jam over the surface
Roll the rectangle starting from the bottom, trying to roll it very tightly to form a long cylinder
Cut the cylinder into slices about 1 to 1.5 inches thick
Place the cylinders in the colomba mold (I used this) spaced about half an inch apart. Cover and let rise for another hour. After the time has passed, brush the rolls with milk and sprinkle the sugar sprinkles on top. Bake in a preheated oven at 350°F for 30 minutes, remove from the oven and let cool completely.
