Ingredients
FOR THE DOUGH
- 2 1/2 cups all-purpose flour
- 1 cup Greek yogurt 0% fat
- Half teaspoon baking soda
- 1 teaspoon salt
- 14 oz boiled potatoes
- 7 oz pizza mozzarella
- salt
- pepper
- 2 tbsp extra virgin olive oil
- chopped parsley
- 1 clove garlic (optional)

Steps
Pour the flour into the bowl with the Greek yogurt, the baking soda and the salt.
Knead until you form an elastic and compact ball. Cover the bowl with plastic wrap and let it rest for 30 minutes at room temperature
With the help of the scraper divide the dough into 8 equal parts and form 8 balls all of the same size
Roll out each ball with your fingertips to form a circle with a diameter of 4 inches
Mash the boiled potatoes with a fork into a puree. Season with salt and pepper
Place a spoonful of potatoes and the mozzarella in the center of each disc
Seal each disc tightly to form a ball
Roll out each ball with a rolling pin to form a flatbread of 4 inches
Cook the flatbreads on the hot pan on both sides until golden and puffy
